This herb crusted salmon recipe is a very easy way to create a culinary sensation without having to do much. Chopping off a few herbs, adding the panko and spreading a bit of mustard. Et voilà! A simple salmon fillet in a beautiful attire ready for an explosion of flavours. No more excuse. You can prepare it on a Monday night when you have zero inspiration for dinner or to impress your guests at a lavish dinner party.
INGREDIENTS
Serves: 2-4 depending on your guests’ appetite 🙂
500 grams salmon fillet cut into 4 pieces cut from the thick part of the fillet
2 tablespoons of Dijon mustard
2 tablespoons of dill (finely chopped)
1 tablespoon of chive (finely chopped)
2 tablespoon of extra virgin olive oil
2/3 cup of panko
Salt and pepper
METHOD
Preheat the oven 210 degrees Celsius.
In a small bowl mix the dill, chives, panko and the olive oil. Add some salt and pepper. Make sure the oil coats the preparation well. Add a little bit more if it feels too dry.
Pat dry the salmon fillets with kitchen towel and season both sides of the fillets with salt. Place them on a baking tray lined with foil or baking paper and brush the top of the fillets with the mustard uniformly.
Spread the panko herby mixture on top of the mustard. It should adhere to the salmon flesh. Don’t worry if it feels a bit loose.
Place the tray in the hot oven and bake for 10 to 15 minutes or until golden and cooked through.
Serve with chargrilled broccoli, panfried kale or steamed spinach.
